Tar Heel Pie


I'm a little slow getting around to posting this. In April we went to North Carolina and as a pie lover this postcard jumped off the rack and into my hands. This is the 'state pie' of North Carolina. Pecans and chocolate!

Tar Heel Pie

1 cup chocolate chips
1 stick butter, melted
1 cup chopped pecans
1 tsp. vanilla
1/2 cup plain flour
1/2 cup white sugar
1/2 cup brown sugar
2 eggs, beaten

Pour warm butter over chocolate chips and stir. Blend all remaining ingredients and stir into chocolate chip mixture. Pour into an unbaked pie shell. Bake in 350* oven for 30-40 minutes.

Chimney Rock near Lake Lure


This is a burl from a Black Birch. I was amazed at the size. Its quite lovely wood. Click on the images to enlarge.

Lake Lure is where Dirty Dancing was filmed. Its a lovely area. You can go to the top of Chimney Rock if you look closely you'll see a fence around the edges. Spectacular view from up there, but we didn't get to see it. It wasn't open :(  There was a nice little town to roam around and shop though.

    1. Thanks, Tracy. It is and Grandfather Mountain has something like 3 climate zones and is for experienced alpine climbers.

  2. That pie sounds quite easy to make, I must have a go. Those caverns look great too and North Carolina looks lovely at that time of the year.
